Years ago there was a small Indian restaurant down the street from where I worked. I became friends with them and they dialed in my level of heat. I would even go into the kitchen and congratulate the chef who spoke little English.
I would always get their non-vegitarian thali, which had a piece of tandoori chicken and four side dishes. I would get it to go and eat in my car. Three of the four side dishes they made for me were so spicy that my mouth would be burning, I'd be sweating, my nose would be running, and tears were streaming down my cheeks.
The food was extremely tasty, too, not just hot for hot sake. It was ecstasy; an oral-gasm for the senses.
I also used to go to a particular Korean place near where I lived. It was owned by a Korean lady and all the waitresses were Korean.
Their spicy seafood soup was almost as spicy as the food at that Indian restaurant. And it was FULL of flavor.
I also used to love their daeji bulgogi (thinly sliced, marinated pork) that you cooked on a round grill in your table top.
There are other examples. Certain, Thai, Indonesian, Cajun and Mexican places had delicious spicy food.
I haven't had access to great places like that for years and my tolerance isn't what it once was, but I still love spicy food and I have some tasty hot sauces at home. One is mango-habañero and another is Gochujang.
My wife can't handle it at all. She even has to be careful of normal American-style Thai curry.
I'll be eating something and she'll ask if it's spicy. I'll say not really, so she'll ask for a taste and is always in agony. LOL10 Reply

1 yMy grandma makes this incredible Caribbean pepper sauce with scotch bonnet peppers and other stuff. It's not too spicy and it's kind of sweet ish. I add it to most of my food, especially when I cook something that turns out more bland than I had hoped.
I like spice, but not extreme spice. And definitely not with all foods. The best peppers in my opinion are called cascabella peppers. Those, I'll put in shawarma wraps, and on the side with other meals. They're just the right amount of spice and taste kind of tangy. They're refreshing.10 Reply
1 yWell... it's all according to tastes, but if your food is so spicy you can't taste the food, I think that's too spicy.
I personally don't like my eyes watering and mouth burning. Spices should enhance your taste experience, improve and bring out the best flavors of the food, not burn holes in your sinuses, cause you to weep, etc.
The FOOD is paramount. You want to taste IT. A little heat goes a long way. And too many spices may overwhelm the food they're on.
Use a light hand with very hot and very strong spices. Make sure the spices you're using blend together to create something new on the food you're cooking. And be choosy about which spices you use on food that those spices are NOT commonly used on.

Nope. If you love heavy spices, you can surely cook that way. Just saying what I've found. Sometimes the spices overwhelm the food or clash with each other and/or the food. Check out what cookbooks recommend on spice combos. Then add your own spin.

1 yI like a little tingle but I find if it's too spicy it kills the food and all you taste is the heat. I'll go up to a madras curry or perhaps the average chilli but I'm not a great lover of things like phall curries

10 Reply As a Mexican I have considerably weaker tolerance than most. That said I’ve been trying to get better since daring myself to do the one death chip challenge. I can’t even eat a full bag of hot Cheetos, but ill take a little bite of chile and take a big bite if food, the best 🤤

1 yFrom just a kick like those spicy Asian noodles spicy. But it depends. I'm not a fan of the food that is just spicy. Typically I get that from lots of east Asian noodles but I like it to have that peppery smell too or if you can still taste those other spices with it like Indian, Thai and Mexican food. The spiciness just reduce the flavor but if it has a bold and aromatic flavor, I don't mind it being so spicy.

When I go to a Thai restaurant I ask for it “Thai Hot”. Then when they ask are you sure, I say yes. But recently I am backing off a bit. I also have always gone for taste, not just heat. My favorite flavor is habanero sauce.
