Why is French food (cassoulet, quiche, beef stew, etc) considered the best in the world when Mexican tacos, Italian pizza& Spanish paella is as good?

Why is French food (cassoulet, quiche, beef stew, etc) considered the best in the world when Mexican tacos & burrito, Italian pizza, Spanish paella & Indian curry are as good if not better than French food?

I have already tried the 2 most popular French dishes: Coq au Vin ( which is chicken marinated in wine) and Boeuf Bourgignon ( which is basically beef stew) and dishes from other countries like Kentuky fried chicken (KFC) (which is American), pizza (which is Italian) and tacos (which is Mexican) and I much prefer KFC, pizza and tacos which are much more delicious and tastier than the 2 French dishes So I don't think French cuisine is the best cuisine in the world. French cuisine is very, very overrated Italian, Mexican and Asian cuisine is as good if not better than French cuisine and French dishes.

French cooking respects the main ingredients and cooks them in a way that brings out its best side without masking it. Mexican cooking is just shoving a tonne of spice in a dish, it could be beef, or dog, you can't tell because all you can taste is the spices.

Ironically I tried French Tacos ( even though Tacos is Mexican) here in France and it was delicious!

So I'm guessing the Tacos in Mexico or in the US ( in NYC for example) is as good if not better!

If anything what made me puke was the ready made microwavable meal of Coq au Vin. It must be due to the wine they marinate the chicken with.
