In you job, you have to have a high level of energy I would guess, and my own 'escort' friend in Vista, CA is also and exercises regularly.
With that said, my ideal breakfast includes coffee and some kind of fruit, sliced navel orange, grapes, maybe a banana (rarely) but always something that gives me good level of blood sugar. I stay as "lean' as possible, and that is the best way I know of how to do that and at the same time have good level of energy

A healthy breakfast should be colorful, filling and balanced. Tomatoes, cucumbers and boiled eggs like the ones on the plate are already a vitamin and protein bomb. Walnuts, hazelnuts and almonds on the side: they are brain-friendly! Cheese is also a calcium source. Olives are looking at you like “I’m here too!” Bread? If it were me, I would add a whole grain slice and it would be gone in no time.

1 yI'll speak to the typical US breakfast since I'm not familiar with other cultures typical first meal of the day.
Here is the USA breakfast has historically been a festival of carbs. Breakfast cereals, all made from grains and LOADED with added processed sugars. And breads, bagels, muffins, pastries, etc.
So recognizing this, I try to make a conscious effort to remove as much carbs from breakfast as I can. 3 mornings per week I do all protein for breakfast. On non protein days I eat plain oatmeal and add my own fruits and nuts like raisins, cranberries, walnuts, and pecans. Or I'll have a small portion of toast or half a bagel with butter, no jelly or other fruit spread loaded with processed sugars. I'll add a banana or an orange some days.
I just can't do the carbs / sugars.

1 yI trade between an egg with spinach, mushrooms, garlic, green onions made into a little omelet with blueberries and fresh strawberries on the side and cafe au lait and healthy cereal with fruit on top and coffee along with a few slices of sausage. I alternate the two breakfasts and sometimes I have grits as my cereal and add spinach etc to that. Sometimes I add an egg to the grits breakfast... To mix it up.

1 yI guess it depends. I usually go with cereal and fruit, because I want to get my fruits in and some quick energy. Also, my system just prefers to delay protein until lunch, and I always have more time for lunch than breakfast. But, protein and fat digest slower, so if you wanted to stay full longer, this could be the right direction.

Boring?Boring, when it's stereotypically repetitive. Also: much of what is labelled ''healthy'' lacks some taste :)
My own ''healthy'': being aware of what I put into myself during the day and keep it well enough balanced.
