Generally, i agree. They can be worse in ways too. However, you can almost certainly find one or more restaurants that are superior to the chains in most ways. Plus, you’re supporting the local economy. Often franchises use a sort of welfare system to keep lousy branches operating. Location A is losing money, but location B is making enough for both. So the franchise cut from B is used to keep A in business, usually for the short term and it’s typically multiple successful locations supporting one or two failing branches. Throwing money at the big chains literally supports a lousy business model. If you can’t offer quality products and services, you should go out of business. That is how capitalism is supposed to work.
It depends. With chains you're more likely to get consistency. But there's a lot to be said for the unique quality of locally owned restaurants it's feast or famine with those. Some are all about the bottom line. And others it's a passion and about building a brand and customer base.

I don’t really get into college, mostly just an NFL guy. I’ve heard the canes along with the Baltimore Ravens get called the “felons.” Lmao 😂

Absolutely. They get to know their customers, what the locals like, they can try new things and stop offering things don't want.
