Trending & News You need Holstein Friesian cow milk without antibiotics. Most cheese sorts get their taste from saline they lie days in. This saline contains specific bacteria which give unique taste while seasoning for every cheese. I think in curd shape Gouda, Emmental or Parmesan are practically the same, only milk makes a difference, dirty salty water and seasoning gives them the real taste.
However I'm just a cheese eater, have not much clue how to much one , So is my reply just an assumption.
We made farmers cheese when we were younger that was really yummy but never gouda.
I'm surprised that no one else has gone to where I shall, in the latter portion of my response.
Although being a lover of cheese, I have not attempted to produce gouda cheese at home.
I do however, successfully produce another type of cheese, commonly, if vulgarly, known as fomunda.
It's not normally intended for human consumption, but hey, car salespeople like to say that there's an ass for every seat, so...

I made mozzarella and ricotta back in the day, the mozzarella was a disaster, I spent like $50 and got a golf full size of cheese that didn't taste anywhere near as good as the $5 mozzarella in the grocery store. The ricotta was pretty good though

No. But a seriously good aged gouda we had in Amsterdam was easily one of the best cheeses I've ever eaten. They freight... but Australia is a long way even by air freight... alas.
