Ever made a sourdough starter?

I just started one this morning using wild yeast in the air and flour. Probably gonna take a week or so.

I have a few times and it is great fun... a bit like having a pet.

My advice: cleanliness is next to godliness. You'll want to move it to clean containers every couple of days to start. I lost one to mould. Until the acid levels build up it is vulnerable to attack from organisms other than the natural yeast floating through the air that you want.

Use rye flour otherwise it's not a sourdough. Order a started culture online it's significantly reduces time until sourdough gets proper balance between yeast and milk acid bacteria, all undesired bacteria sorts and bad yeasts get completely suppressed. A week is definitely too short time.

Yep, started it about 6 months ago I wanna say. She's pretty happy now.

It will definitely take more than a week to get a strong starter though ☺️

At that point its just wet flour, doesn't have the taste or ability to double in size.
Mine has a lovely layer of hooch ontop in the fridge now. Will probably make a loaf this weekend

I’ve made quite a few. My favorite was in a tiny apartment in Rome, fed with local flour; the bread had this gentle tang and a crazy good crust.

Just keep feeding it regularly, watch for bubbles and a pleasant, slightly fruity smell. The moment it doubles after a feeding, you’re ready to bake 🍞
