When you’re cooking Steak?

Question

Do you fry your Steak on the frying pan or do you grill it on the grill? What kind of Steak do you buy black Angus or USDA? Do you go to a butcher shop or buy your Steaks 🥩 at the local grocery store?

I like to grill it outdoors but my wife bought a griddle that sits on the stovetop that does a good job. I get steaK from Kansas City steaks. I get sirloin, filet mignon and T bones. I locked in a price for a year and get a delivery every moonth, I still have a prime rib is the freezer.

I prefer my grill, but I need to give it some TLC this season first. Angus and USDA are not relatable as they refer to different criteria. Local grocery store which has a butcher shop inside.  Bonus Note : There are currently 8 USDA grades of beef , but the odds are shoppers will only see 3 of them. Prime, Choice, Select (used to the called "Good" but the government changed it a few decades ago since it didn't sound so "good"). Under that comes 5 production grades used in the factory preparation of other foods: Standard, Commercial, Utility, Cutter, and Canner. You will see these cuts ending up in your frozen meatballs, cans of soup, canned ravioli, etc.

I use a frying pan because I am not great on the grill tbh. I can tell the temperature better on the stove and thereby find it easier to cook it to the right temperatures for everyone (i usually do medium while my wife likes extra well done for example).

I can't stand Angus so I get USDA kinds of steak.

And normal grocery store brand is good enough for me. I am not a big steak eater to begin with but it's good from time to time. I am more into chicken though.

Frypan. I cook it blue and a flat surface provides a even surface cook. Control over temperature allows the meat to be warmed through.

Buying? I tend not to pay the premium for a butcher, but do order in venison, kangaroo, goat cuts, etc.

I'm in Texas, so.. currently, there's two grills, a smoker, a pit... soon enough, a mini-grill... and two stoves anything you can think of, we can probably do it... lol

If I'm cooking for 1 I'll probably stick with a frying pan, if I'm cooking multiple it'll be in summer on the grill I'll buy whatever looks good and will go to either a butchers or a store

depends. in summer when i'm eating outside, i use a grill. otherwise a pan. i just get a regular ass steak. nothing fancy.

I do either a reverse sear on my smoker or sous vide and seared over charcoal.
