She said that I seem timid and soft spoken which is how she used to be. But she also said that she sees potential and is trying to help me be more confident.

Women who are interested in a guy are 99% of the time interested in him because of his potential, rather than what he is already. I wouldn't take offence to it at all. Instead, she's assuming you'll be flattered that she sees potential in you, and flattered that she wants to help you.

Thank you, when she said I was soft spoken and timid my heart sank. I’ve always heard women prefer men who are already confident over making a man confident. If that makes sense.
