Could I ask a guy at the gym for his number?

Ask for his advice first, if he's open to walking you through some thing in the gym, especially if he spends significant time doing so, then you can ask for his number. Don't just outright ask him, because if he's attractive enough for you as a girl to want to go up to, he's probably not short of female attention.
See what muscle group he's working, do something similar, then go up ("hey, sorry, I just wanted to ask...") and just tell him you're trying to work on that, you saw he was doing something, you're newer to the gym, and if he would tell you/ show you a couple movements- if he has time.
If he's short with you, or just flat out says no, it's not as hard of a rejection, and you can even play it off as that you weren't interested in him, just what he was doing.

Imagine shooting your shot entirely and getting shot down- you'd have to find a new gym, or go at a different time.

This is great advice I might stop him and ask if he could give me advice on my form for bicep curls or something I was going to ask something generic like if he knew the time as my like open but I think asking for genuine help is better and yeah I have another gym I go to or sometimes I go in the mornings he’s only there at night so it would just mean slightly changing my routine if it went to shit

Absolutely, I encourage it. Go after what you want. If you sit back and always wish that you had, you will regret it. Worst case he says he's not interested, so what. Move on to the next attractive person you're interested in

Absolutely. He might be shocked you asked (because this rarely happens if ever), so if you get that reaction, don't over think it, because that's all it will be, shock. But many guys would LOVE to be approached.
