Been seeing this guy every once in a while. I asked him if he was busy after I’d got off work. He responded immediately saying he was at the vet. It’s 8pm on a Saturday. Yes, I know there’s 24-hour vets, but my gut is telling me he’s lying. This is so dumb, but I overthink and don’t know how to stop it.

You can't tell whether one text is true. Eventually you can figure out if someone is prone to lying.
"... but my gut is telling me he’s lying." Then stop dealing with him! Anon, haven't you heard the old saying, "Always go with your instinct?" He probably is lying to you!
The best way to detect a liar via text is look for inconsistencies: basically their stories/words don't match up. Yeah, there are vets open 24/7, but does he have a pet? And if so, what's wrong with it? Ask him more details...
But as you said, if his story seems off to you? Back off. Because it'll just get worse the longer you stay with him, making it harder for you to stop seeing him because you get too attached to him. If he wants to see you bad enough? Let him initiate all dates and meetings! If he doesn't, well you know the truth...
You can't. That is why you never text.
