Is a guy interested if he constantly takes around 2 days to respond but when he does responds he responds a fair bit of info back?

when he does responds back and if you put all those responses together it does make up a long paragraph so he does involve a fair bit of info in his responses.

Yeah most likely or he wouldn't respond at all. A couple of things to consider. In my experience guys are real big into texting. Of the guy friends that I have none of them are quick to respond. They don't take two days but could text them in the morning and not get one back until the evening. The other thing is that he could be busy with work and other life related stuff. That is a legit excuse. While it doesn't take long to shoot someone a text back maybe he just wants to wait until he has time to put some thought into the response which is why you get a fair amount back when he does finally text.

Depends on how busy he actually is. Most guys, if they like someone whenever they have some free time chances are it'll go to trying to interact with that person more. If he's consistently late, but there's a pattern then he's probably got you in a rotation of women he talks to until you give him a chance to hit.

he's showing that he's not overly interested, making you think of him more which causes you to grow in your attraction to him and wants to come off as a busy guy
