Why do good men let themselves be used by woman?

It's because they've been taught that the way to get a woman to like them is to do nice things for them, and that women will play hard to get until the man wins them over. That's just how they think dating works. This way of thinking kind of also puts what the woman wants above what the man wants, and gives her all of the power.

It's that plus a lack of options a lot of the time. Lack of options makes them desperate for female attention, so they cling on to any woman who at least allows them to pursue them and who they feel like they have a chance with.

Because they either were educated that way (happy wife, happy life) or they fear that speaking up could ruin the relationship. At least some guys rather compromise with their goals and needs to not cause trouble in a relationship. So they avoid doing anything that might make her unhappy.

The good men who do do it, are usually nice men who are doormats, maybe desperate for love, and probably a bit naive.. Toxic women or people draw to good people because they seem easy to take advantage of.
