Guy I’ve been seeing made a status about talking to other women. I texted him and told him if he felt that way then i would step back because the status made me feel like a back up plan and a few hours later i noticed the status was deleted. Why did he delete it if that’s how he really felt and I’ve saw it?

Hmmm... this is actually not all that straightforward. I don't think anybody aside from the guy himself will be able to really clarify where he's coming from on this.
The short answer is: He changed the status because you told him it upset you. Not because he was going to try and pretend you hadn't seen it. Or to hide what he originally wrote from you. (as you said... he knows you've already seen it)
Ok, so... then what does that mean? That's where he's the only one who can tell you.
It really really depends on how exactly your conversation went, and especially how that conversation ended.
If the conversation was basically you saying "ok, I'm done"... and he wasn't trying to convince you that you weren't a backup plan; or agreed to not see other women; or otherwise made it clear that he doesn't want to lose you... then that's one thing.
If you told him you felt like a backup and "you're done" and he tried to explain why it was ok for him to see other women as well, and that you're trying to get too serious too fast or whateverthefuck... then that's a completely different situation.
How did you leave things? You said "I'm done" and he said..."ok, take care then sorry things didn't work out"
Or you said "I'm done" and he tried to convince you that you shouldn't be "done" because he really likes you, or tries to backtrack completely on seeing other women after he understood that doing so meant that you were "done."
Deleting his status was to not piss you off. But whether that was simply because he understood that reading that status (even if you've already seen it) would upset you... and was trying not to be a jerk. Or if he deleted it in an effort to show that he no longer is interested in other women... I can't say. It depends on your conversation.
Your conversation and what was said is the context in which he made the decision to delete the status. Without knowing the context, I can't tell you where he's coming from. 🙂
