I had a bad argument with him (I swear I thought about quitting the whole day because he was so annoying) and the next morning we met at a Starbucks by coincidence and when I wanted to pay he payed for it and gave me a car ride after some days even suggested to met there in the morning again. Why can’t he just tell me he is sorry

How’s he supposed to know he hurt your feelings if you don’t communicate it? He may not even be sorry for what he said, or realized that stating what is a fact to him (that you complain a lot) was so hurtful. Instead he may have made those gestures as a guy, even just as your boss. My old boss bought me different things without me asking, whether it was a snack or even breakfast.
It sounds like he is trying to apologize for something. Without knowing what the argument was about it's difficult to know which one of you was wrong.
You need esoteric training. Sit and feel with your heart "it is objectively wrong..." and marinate in it. Do not use your intellect. Use your heart.
