Eat less processed food. More raw fruits and vegetables. In order for vegan diet to work, I'd say at least HALF of your calories should be exclusively from raw fruit and veggies. Raw foods are low in calories, rich in fiber and micronutrients, and are very filling. Just because its vegan doesn't mean its healthy.
Do some strength training a couple times a week too, adding muscle will help your body burn more calories and will give you more definition/tone. Squats and deadlifts are your best bet because they work every muscle on your body so it burns 1000x more calories than if you were doing bicep curls.

First question: "How much do you actually eat?"; I hate to be the bearer of bad news but not knowing how much you eat sort of stifles any and all logical preparations for you. After all you may be eating enough and exercising wrong which is very common and surprisingly easy to do. Unless you burn off less than 500 calories a day and eat about 3000 (which should be hard[er] as a vegan let alone a normal person) your problem likely lies elsewhere.
maybe you just need to lay off the flour and sugars more than eating less.
for example if you eat the same amount of food you do now, since you say you eat a lot, but instead of eating stuff with flour and sugar and replacing that with good healthy foods, you'll still lose weight without necessarily eating less. Because if you eat less but your diet consists of sugary flour foods, you will still be on the same boat you are now.
are you eating because your bored or hungry? bored- get up and do something else to get your mind off it. hungry- if you don't want to eat more (be careful that you are still getting the nutrients and stuff your body needs), then try drinking water. it will make you feel full. this is what i do at night when i'm starving, i just drink some water and i'm good to go.
Try using a food journal with a friend or using a food tracker app. They'll hold you accountable. Hell, if you want , we can find one together. I always have trouble eating properly and lack motivation to do it on my own :p

you probably eat too much because your body isn't getting enough protein.
try eating only small amounts? and just try to eat as long as possible (but small amount), so you kinda spend a lot of time eating a little bit :)
