Coming from a vegetarian herself, you can't and shouldn't. He will when and if he wants to. Do not try to force or persuade him. He is himself and he will live as himself.

You do what you can to encourage him and entice him into being vegetarian, but you can't make him be vegetarian. I married a vegetarian, partly because that is the life style I wanted, and because I knew if I married a meat eater, it would be very difficult for me to remain vegetarian.
Stop trying to change him. If you really love him you'll stop trying. You have asked him and shown concern. But it's his decision and any further than asking is manipulative and controlling.
What would you think if he tried to convince you to eat meat? Not so fun eh. You can't change someone against his will and you just gotta accept his choices.
Human's are carnivores by nature. You shouldn't try to force anyone to eat in a way that's just unnatural for them. Do your own thing if you really want to but do not expect him to follow
Let him eat whatever he wants. If you're vegan then okay but don't force him to be. Olants have life too they also feel hurt by the way. It's not for his own good it's because you don't eat it.
