I was thinking to have 2 poached eggs with smoked salmon as a snack or will this be too much?

I would only eat the salmon if it's wild caught (or extremely expensive rare healthy farm raised) the eggs if they are pasture raised, the beef if grass fed, and potatoes. And broccoli if prepared right. Everything else sounds like junk food I would avoid, especially seed oils, they are 10 times worse than processed sugar.
It sounds like you want it all tasty and sweet...
Why not eat foods plain? I mean they can be tasty and healthy at the same time, but even if you don't have the nerve to prepare it tasty, why does it need to be?
I'm sure you also workout since you want to get in shape. Which means you step out of comfort and struggle. So you definitely have the willpower to eat what's healthier even if it isn't as ultra-palatable.
In summary, protein rich foods such as salmon, (as long as they're not full of toxins) are impossible to get fattened by. You can eat 10 pounds of salmon a day and you will only lose fat...
Whereas surviving on some processed foods will make you weak and fat no matter how much you workout.
How much you trying to lose by? Another good way to track is tracking your weight and put down how much you want to lose and what you eat. They make plans on how to achieve this goals, but that’s a good start and honestly I don’t know if you need to eat more or not.
