If you've gained that much weight & can't see a difference, then you don't have a ogod enough reference. Like you said, you haven't taken before pictures. I have taken many pictures this year & right now I'm 155lbs while at the beginning of the year I was 152-153lbs. In my mind, I look the same but when I look back, I can see more definition in my face & muscles. And this is just a difference of a few pounds so yours would be much more noticeable if you had good references.
Probably because it's gradual. You are slowly replacing fat with muscle.
I barely had any fat to start off with lol!
I've always been pretty skinny with slightly wide shoulders.
My girlfriend and many of my friends and family members have noticed changes.

From what you stated, you had gained 30lbs and haven’t seen results.
Working out is one of a factor to build your muscle to keep you fit. I suggest, you start HIIT. It burns more calories and fat through the body. Adjust your workout sched by increasing it to an hour a day, 6days a week. And prep/cook your own meal.
