Yes and no, if we are taught what not to see we do but our mind tricks us all the time. Here's something to blow your mind. We always assume that actors are real people based on a copied image that's not them aka tv, but what happens if we never meet them in real life, how do we know that their not just computer generated or even exist. We see them with our eyes and accept them as fact but what if they are not? It's a little abstract but thought provoking if you get it. Lasers and holograms are another thing we know they are fake but sometimes we can't help avoiding them as if they are a solid. Things like that.

Really thought provoking question - I will say both answers, it is human to make an initial assumption but it is also human to analyse so this initial assumption is fed into the most marvellous computer of the human brain, all the other available data/variables are considered for a judgement to be made which most likely to adaptation should any data/variable change.
The greatest thing about this is that it is all done subconsciously that it feels almost an instinctive/gut decision so it seems split second/impulsive but an underlying process has done a deep dive on it.
Not unless that mind loves being wrong all the time. Intelligent minds adjust their beliefs accordin to the quality of evidence supporting them. That evidence may or may not be visible in real time, and it may contradict what the eye's see entirely. For example the earth is a sphere despite looking flat from where one stands.
Eye's evolved to survive, not tell the truth.
Our eyes belong to our mind it is one and the same as far as per with... we can See what we are hoping is the case , we can also see what we hope is NOT the case. And Well there are always facts we can use to verify. Really important component of any absolute assessment. 💚

Our mental perception defines what we see. As the old adage goes, “you see what you want too.”
I think what the eyes see is just a perception, but still you have the intelligence to reason if your perception could be wrong or not, based in your experience.

True to a degree, it is important to realize that you can't always trust your eyes, they can deceive you.
