I grew up calling them the "heels" of the loaf.
But, something has come up in the last few years becoming my mother's caregiver that relates to this question. So, with the asker's permission, I would like to expand on the question.

So, "When using the end pieces (Heels) to make a sandwich... do you put the crust sides out or do you put the bread sides out?
Great question. The sliced side must face the inside of the sandwich and can only be paired with its neighboring slice within the loaf. No exceptions
And that is why this must be added to this question... Because, although I am on your side of thinking... I have been corrected by my mother on so many occasions.

I gave them two names:
- first slice
- last slice
On 'real' bread I love them right out of the oven.

When the bread is right off the oven or bread-machine, HELL YES!!! I love them! Who wouldn't love bread crunchy in the outside, while soft & fluffy in the inside?
Heel. Don't take them out keeps the rest of the loaf from drying out.. Don't eat the or the one next to it from either end. Will use the heel for a hot dog if I don't have a bun does well for that

Me and my family always call them the skins. The skins are stiff and dry, but we always try not to waste food and finish them all. Spreading more peanut butter/Nutella/margarine on the skins helps me to finish them.
