i was in a similar situation while doing a tutor job in the context of a school project. it wasn't "spitting" but i'm usually not easily offended, so i would have done the same in that scenario.
so for context: i was hired for an 8 week project. the students would need a grade at the end of the project in a class of their choice in order to pass the year. i was one of the project tutors. so then there was this student who was really like "gangster", disrespecting me all the time, being loud and interrupting everything all the time.
what i do is, i give one warning. i tell them to stop what they are doing and never do that again or i'll expell them and if i expell them, they have to repeat the entire year. i wasn't even sure i was allowed to dot hat. so anyway the student did it again and i sent him to the office to tell the principal that i had expelled him to deal with that situation.
10 minutes later the student was back witha nother teacher, telling me that i can't just expell students. so basically i said: well it's either he leaves my class or i do. your choice. i think the principal decided to stuff that student into another class later but i really didn't care about this asshole of a student.
so for clarity: i wasn't one of the schools teachers. just a temporary tutor for that project.

The male teacher was restricted from physically retaliating because 1) he was a teacher and she was a student, 2) she was a girl, and 3) he would have lost his job and possibly been prosecuted for assaulting a female student.
If I was in those circumstances, I would have found a way to retaliate. Get her suspended with assault on her permanent record, or at least kicked out of the class.

It is absolutely unacceptable that a teacher is fair game for any kind of violent or offensive assault by student. There was a time, generations ago, that the teacher was one of the most highly respected members of the community. Parents would always back up a teacher. Today, it's horrendous.
