umm, tricky question, but i'll try my best, while both are similar, presenting themselves as "nice guys", but still they are different groups.

Simps are what we used to call white knights, you know, the guy who try to present themselves as a gentlement, who would throw themselves to the ground and have a woman walk over them so she doesn't step on a puddle, granted, this is a bit of a exageration, but the most common form you see is on social media where guys will jump to defend any random girl, no matter how on the wrong she is.

Incels on the other hand is a term that has been muddle and twisted to serve as a new boogieman, basically it used to describe guys who weren't able to score with the women, for any variety of reasons, this is why they are called INvoluntary CELivate, but there are behaviours that saddly are very common in the people who are described like this, witch is the bitternes over their romantic situation, or putting they lack of success on the opposite gender no wanting to "look pass the surface" witch sometimes might be true, but in other cases is a statement that comes from lack of self awarenes over their own faults.

Mind you, this is not something that applies only to men, is just most noticed on men

a lot of what you say is factually incorrect. Im a virgin still but I've never saught female validation otherwise i'd have been laid about 12-15 times (these are the number of girls who approached me and were aggressively forward for sex), I've never approached women it's not for me. I have defended girls when they are right, but MOST of the time they are not and i give them the talk.. they refuse to listen and 2-3yrs down the line they end up paying for it and making their environment toxic for you and others then blame mental health and seek therapy (most girls are like this).
The guys on the market who get women are FAKING their profiles, lying, creating a rich environment that doesn't last. They spent their money on cars. These are incels and simps, by the time they reach 30 theyve slept with 50+ girls, got a few pregnant and want to live in their girlfriend's house, no house, on minimum wage, etc. They carried this bad boy image and ruined the dating market because by 30 girls are tired of fuckboys and refuse to believe there are good guys out there.
This is me, £million house, virgin, i dont objectify women. No car, i can get same day dates. I dont bother with text essays, calling. I dont text 100s of women, i find attractive someone who chases me and ignore the ones who have been abused by the simps/incel fuckboys.
