My boyfriend and I been together for three years, from what I know he’s been faithful. I was planning to come over on the weekend for awhile and was coming over after work on a Friday. I called him on my way over and he was driving home from work still, I said I would pick up food and that’s it. When I got over, he was taking his sheets off and putting in his laundry basket, I asked why he was doing that and he said “I was cleaning up and spilled an old drink on the sheets and it smelled funny” he has this tray right next to his bed that we constantly kick. Call me crazy but I’m a paranoid person so when I had the chance I smelled his sheets and it didn’t smell weird or unfamiliar but it was wet. Anyways he left it there in the bathroom all weekend and his bathroom was dirty so I figured I was overreacting. What do you guys think? It would be pretty risky to have a girl over the day he knew I was coming over or even the day before knowing I will be there

It isn't necessarily hard evidence of cheating especially if a person generally keeps a clean house. Sheets do need to be changed if they get dirty, you sweat in your sleep, or even from masturbation or spills as he explained.

Cheating is a possibility too, but this is just a minor red flag to keep track of in case other more obvious ones occur. It could be completely innocent as well.
