The context here is we've known each other for awhile as friends. He often says I have no idea how much he appreciates me. He has used that term appreciate me a lot, that is very common.

Nothing special this day, a simple Merry Christmas and that response is not normal. I expected a "Merry Christmas" back and that would be that.

Definitely nothing about it all seems interested in getting to know or feelings stuff.

I could be wrong, and hate to limit anyone, but it does seem somewhat dry to me.

These could be good positives, but I’m going to stick with my biased initial and full of effort guess-

dry and he just said love being disrespectful to you in the sense you’re confused about it all and he’s never made other light advances like him trying to do a FaceTime for Christmas.

He just kinda put you in a POSSIBLY awkward situation- if you didn’t like him.

Aside from what it is- his intentions seem to either be saying it and see what he can get and it’s not anything of real effort.

If he’s Indian or British- ask him. They say love and dear quite a bit.

We aren't talking right now, he said he had some things to work through, personal matters but that he'd be back and we'd talk later. I'm not the type to push it when requested for some distance for a bit... possibly holidays too busy maybe? or he has his own business so he could be swamped with running it this time of the year.

Plus since we are only friends, leaving it at that.

It depends, if it was a boyfriend who never told me he loved me, I’d be pretty confused. But if it was just a guy I know, say someone here on GAG, I would just assume that he was just being overly nice. I don't take those at face value because it is normally said to be polite or in the moment of how one feels at that moment about the person it is being said to.

I have been called "love" and "baby" by women in the past and it went nowhere. Would never take that at face value from anyone unless in a relationship with them.

Manner of speaking. Unless he's done something else to indicate you are "his love," I wouldn't make bank on it meaning anything other than a casual comment. It's the holidays, people are full of good cheer and liquor. Wait for some actual, solid indications. Not a vague statement.
