Why are some people so quick to anger or offend?

It depends on the person, but generally, mental health issues of some sort.

In general a lot of people who get angry so easily/get offended so easily are in reality deeply insecure individuals who hate themselves and view themselves as dumb. And so they try to overcompensate, rather than just admit to their flaws.

Basically it's just that a lot of their sadness and insecurities come out as anger and arrogance.

Also, I'm not one to diagnose people, but certain mental disorders often involve anger. Like Narcissist Personality Disorder (NPD), Bipolar Disorder, Borderline Personality Disorder (BPD), Anti-Social Personality Disorder (ADPD), etc, just to name a few.

Not all people with those mental disorders have anger issues, though it is commonly involved, as people with those disorders tend to have issues regulating their emotions due to how their brain is wired.

So all in all, there's no excuse for someone being an asshole, but these are explanations as to why they might be assholes.

It's important to be sympathetic but to also not let them get away with their rude behavior.

It’s weird because many people tend to get angry when you call them on their shit and start getting defensive. Most of the time people who get overly defensive have the most to hide…. Especially when they say stuff themselves but it’s fine when they do it.

Other people are just more easily offended by things.

Politics are polarizing.

Even more so in recent years.

A surprising number of things and issues have become political that have no business being political at all. As such, things are very "us vs them" nowadays, and any sign that someone else is a "them" leads to a pretty vehement retaliation.

Additionally, anonymity behind a computer screen makes people much bolder and much more vocal about their opinions.

I used to know a guy in school that was like that. One time, I walked up to him and just said, "Hi, Larry." and he got pissed at me like I just said I wanted rape his dog! Granted, he WAS a sexy dog but...
A day or two ago, this rabid cunt named, SueShe responded to one of my questions and then went off on some insane tirade accusing me of having said all sorts of shit to her that I never said!! And, OF COURSE, I'M the one that got into trouble for it!! Assholes like that should go live in a fucking cave if they have no idea how to fit in with society!!

You're going realize there are a lot of people like this out there. Their emotional maturity stalled out at a certain at a young age, they lack problem solving or communication skills, they have mood imbalances, they have never learned responsibility for their decisions, on and on like this.
