My husband has gone to another part of the country for a work event. A female coworker is also there but staying in a different hotel. She’s asked if he wants to go out to eat in a restaurant in the evening , just her and him.

Am I wrong for feeling so jealous about this?

It's business. I used to have a female boss and we often traveled together on business, staying at the same hotels, having meals together etc. My wife always knew what we were doing, and she was never jealous or insecure.

Unless he gives you some definitive reason to worry, it's best to take a deep breath and know that he's safe.
