Many U.S. products don't meet our health and safety standards but that's not the main reason.

We don't make money on agriculture so why is the government protecting it?
The government even subsidizes farms by paying them money directly every month. This has led to problems like having too much milk and nobody to drink it or eat the cheese or the yogurt or any other dairy product. Even though Switzerland consumes a lot of dairy products it's still not enough.
The reason is to keep Switzerlands cultural identity alive. People lik me who live in a city are not walking around in traditional clothes and yodeling or going to a Schwingfest. Schwingen is a traditional sport where strong farmers wrestle and the goal is to push both their shoulders into the sawdust. Then they get up and the winner brushes the dust off the losers back and the winner of the whole tournement wins a prize bull which was valuable to farmers in the past.

It keeps rural areas alive. This is also why Switzerland builds public transport to the smallest villages and makes people in populated areas subsidize it.
This keeps Switzerland alive as a living breathing country and not just another place.
Once you stop supporting people in rural areas what will they do? They will try and sell their farm and move to the city. Then the only place where there's any opportunity becomes the city so anybody who wants a chance to build a life has to move there. That makes housing go balistic. Then more people are concentrated in the city and that means politicians prioritize the city even more and neglect the rural areas even more which reinforces the trend. We have seen this in many cities like London, Tokyo and Seoul where the city canibalizes the rest of the country and nobody can stop the decay.

This would also kill tourism and many activities like winter sports and extreme sports hiking etc they also depend on rural areas and tourism.
So it's not about money. It's about the health and the identity of the nation as a whole. Keeping communities alive and making it possible for people to live all over the country instead of only in a few places. So if you're ever visiting a rural area in Switzerland the taxpayer is keeping these areas alive artificially because farmers couldn't compete with the low prices and huge volumes. But many people still buy local produce even though they have to pay more because it's worth it.
It doesn't matter how good Trump thinks his beef is, nobody cares. He loves Mc'Donalds and he's obese so why would anybody listen to his opinion on food anyway.
