Different parts of the world would feel different impacts.
For example many places in africa can't feed their population on plants alone. The humans rely on animals to eat plants not digestable for humans and than eat the animals.
In Europe and NA even a sigificant decrease in meat consumption would benefit the environment, less water wasted, less environments destroyed, less methane and CO2 emissions, and less animals suffering.
Oceans would also regenrate, population of all marine lifeforms returning to their size from 100 years ago, so about tenfold or more what we now have.

Lots of rice and beans. The globe would be noticeable colder. Every person makes enough heat like those older light bulbs, now imagine every slaughtered animal gone. Were talking vegetarian not vegan so there is some farm animals.
Huge things is less antibiotics being fed to our smaller farm animals. So animal disease are way less and chances of jump to people are even less likely. Wet markets won't be a thing and all the piss and shit mixing together with a different dozen mammals would lower flu epidemics avoid a pandemic altogether maybe.
If you just go vegetarian for one day a week you take away 7.5 pounds of CO2 of your carbon footprint a year. Like people ate back in 1950.
Mass third world starvation due soil degradation in industrial countries. Manure and slurry from animal farms is one of the biggest factors that reduces effects of over cultivation of agrarian land. Increased use of artificial fertilizer will accelerate the process of soil degradation.
A lot of food for the animals would be taken away. Animals would over populized so they would need to be killed for no reason. Other than that a lot of people would become way worse... esspecially men. But some would become better in some senses..

The number of animals like cows, sheep, pigs etc. would spiral out of control leading to all kinds of other problems both ethical and practical.
I would be emaciated because I am vegan and all of my food would be bought by the wealthy
