I pick Italy just because I like Italy but every country on that list is interesting in their own way. Super subjective, impossible to pick.

Even if Spain were on the list I wouldn't pick it. What is interesting to some people is normal to others. You get used to it and it doesn't feel special anymore. I love my country but I don't look at it feeling "oh how interesting it is".
On the other side, I could randomly choose between Italy, Japan, UK, France, new Zealand, Norway and a bunch more and easily argue in favour of one of the other just because each country has so much to offer.
