You should add in cardio workouts, especially general conditioning exercises that will make sure your body is functioning as a single system, rather than discreet parts (common danger, especially if doing isolation exercises--burpees, mountain climbers, things like that are great).
That said, the majority of fat loss centers around proper dieting--no amount of exercise will keep off fat if your nutrition is poor. And unfortunately, you can't get rid of fat in just one particular place, it happens over the whole body. So you need to know your metabolic rate and be mindful of your caloric intake.
You can get good results off of weight training, but it is also dependent on age and genetics. Cardio can help. My opinion diet is about 80% of fat loss and six pack abs.

Are you just doing weights or are you doing cardio too?
Like 90% weights with the rare cardio session.
You need to do more cardio and burn off that fat. Keep up the weights as you'll get the definition you want but you won't be able to see it if there's a layer of fat on top. I've done the opposite of you: a ton of cardio and hardly any weights, so my weight has plunged but not much gained in the way of definition.
So 30 min cardio (Mom-Sat) and 3 days of full body muscle workouts is a good combination?
At least 30 minutes is good. I did an hour on a stationary bike on Saturday and burned just over 600 calories.
As others have said - watch your food intake too. A fitness app like MyFitnessPal will track your nutritional intake as well as what you're burning with cardio. I still love my food and the app keeps me from going crazy 'rewarding' myself after a workout and undoing all that effort.
Do cardio too.
