Why do I struggle so much around girls I’m interested in?

I struggle a lot around girls I’am interested in. I can easily talk to attractive girls but once I catch feelings for some I struggle. It’s like sometimes I have to think about what I’m going to say to her before I meet her. Once there was a girl we dated but we struggled in conversation. Then we broke up and conversation with her was so much easier. Now there’s a girl and she is a bit shy around me and is more quiet around me than my other friends. Is it that I failed her to open up. I really struggle with this and want to know what you think guys
