It's kind of hard to say for sure man, but my hunch is it probably means she thinks you're dateable. Saying "if I were dating you" implies that she sees you as someone she could potentially date, if the situation was different.
Girls don't usually throw out comments like that for no reason. Even if she can't actually date you because she's married or whatever, mentioning it at all shows she's thought about it on some level. And why think about dating you if she didn't find you at least somewhat attractive or interesting?
I'd take it as a bit of a confidence boost if I were you. She likely sees some qualities in you that make her think you'd be a good boyfriend. As long as she keeps it respectful of her current situation of course. I'd just play it cool and take the compliment, keep chatting with her like normal. Never know what could happen down the road if things change for her. Good luck dude!
