Why would someone act like they're in a relationship with you but refuse to put an official label on it? I don't think the chances of it becoming something else or lasting are very high.

The talking stage should only be when you're actually getting to know someone. A year long talking stage is cringey.

I didn't even hear about the term until last year when I was dating my ex and she mentioned it. To this day I still don't know what it is and don't care to look it up. The only terms I need to know are the simple ones. Dating, relationship, marriage.
