Mostly it's their discipline. By waking up pre-dawn and working out until noon on an empty stomach they develop a ravenous, starvation hunger and obviously put on both more fat and muscle using this technique. Their exercise regime is also fairly strict and repetitive; do about 100 high leg power squats and tell me it ain't plenty. This helps them develop subcutaneous fat rather than sloppy visceral fat. Basically, they stay fat because they want that kind of fat intentionally. I agree, I think firm subcutaneous fat bodies are more attractive than generally sloppy visceral fat bodies. It's a "grown into" fatness. It's also a superior form of fat that burns off more quickly with exercise, and is basically a result of having done plenty of exercise.
Basically, there a lots of fat people that just suffer that 40% mentality rule and stop, absolutely done with it at 40% but if they pushed it they'd transform. They're at the cusp of burning that newer, better fat away and they're fed up. Quit while they're ahead
oh and the reason sumos stay on that fringe and like it is because it's better for their sport. there is no weight class in sumo.

Like the American concept of concealed carry, the Japanese have the concept of hiding your strengths. Sumo wrestlers are actually musclemen, but their diet & training is designed to hide.

They train hard, they train very very hard. Much more than most other athletes. And they also eat very healthy and closely watch their diet, they don't eat junk food at all. But here's the catch: they eat in large quantities and eat a lot of calories, and they sleep/nap after every meal because it's essential to make a big body.
Sumo wrestlers don't have the unhealthy kind of fat, I mean the fat around organs and all. They are very lean on the inside, literally. The reason why fat is bad for health is it starts collecting around tissues and organs, but in sumo wrestlers because of their diet and exercise, they only have more fat under their skin and not organs. This is why they stay so fit and healthy throughout their career. But once they retire they start developing many kinds of diseases because they don't work as much anymore and the excess fat starts to deposit around the organs that make them sick.
They eat very fatty and enriched foods so they eat more then they burn also it's very common for them to sleep right after they have eaten.

They eat A LOT of food that keeps them fat. Even though they exercise, if they eat more calories than they burn, they gain weight.
It's because of the way they eat. People who work out and get into really good shape and stuff are the ones who don't eat a lot when they eat, but they eat consistently throughout the day. Sumo wrestlers trying to gain weight will actually eat just once a day but eat a LOT in that one sitting. The way the body responds to this way of eating actually results in extreme weight gain. If I remember correctly it basically causes the calories to be stored about half and half between fat and muscles, while those who consistently work out and eat small amounts throughout the day have the calories go almost all towards muscle growth in order to maintain the strain on their muscles.
They consume like 4,000 calories a day. Interestingly enough they are actually healthier then the average person because they exercise so much (their training consists of slapping and pushing each other until they are physically incapable of doing so anymore then taking a short rest and doing it again). Of course once they stop excercising then their health deteriorates as the fat starts to fill the spaces near organs instead of on the outer layer of the body. However to answer your question exercise doesn't actually burn that many calories so since they consume so much the amount they burn off just isn't enough to completely get rid of the fat so it builds up over time.
Just because you are exercising doesn’t mean you are offsetting the amount of calories you are consuming daily.
It’s basic math. If your average daily caloric expenditure is 2500 and daily caloric consumption is 4000, the body stores the unused 1500 calories as fat.
Multiple 1500 calories by 7 days, what do you get?
That’s what if you’re exercising and want to stay lean you have to keep tap of your daily caloric consumption and include an intense weekly routine like running and HIIT in your workout.

Sumo wrestler eat a lot of high nutrient high protein food and then train so when you see them yes they have a lot of fat but also have a lot of muscle, a lot of training wrestlers end up washing out due to not being able to eat or hurting themselves

Yeah, they train a lot, but they also eat MASSIVE amounts of food.
They eat healthy food just a shit ton if it. Think of a fat squirrel who only eats nuts but is fat none the less. Eat more calories than you burn you get fat.
Believe it or not exercise has a limited effect on fat loss. You can exercise until you drop but if you eat more that you need your body will store that extra energy as fat.

Because for exercise to even work not only do you have to do a lot of cardio you have to watch your diet too and they do not do that.
