That's just how the style works. Anime/manga style relies on exaggeration and keeping things simple. At lof of the the things that make a face unique, for example face shape, nose shape, and skin folds are simplified. Not only is this easier, but more importantly it lets the eyes of the character pop out, which are arguably the single most important part to convey the characters' feelings.
It's also simply a matter of aesthetics. To many people a very subtle nose and mouth look a lot better then the big and very obvious ones you tend to see in cartoons.
I've also seen anime and manga where characters have unique faces. There's a lot you can do with just eyes, eyebrows, color, and extra traits (eg. scars, freckles).

I think its just easier and faster to animate instead of making a different face for every character.
