Ghosts & Goblins on NES (both modes), Transformers: Convoy No Nazo, Ninja Gaiden 1-3, and IWBTG.
I was actually the only boy in kindergarten who could beat Transformers: Convoy No Nazo at the time and gathered crowds watching me play it. It's a brutal game but the trick is to take our time since there's no time limit per stage. Most little kids just dash forward in a gung-ho way but I was more cautious and only proceeded right in baby-steps (not turtle pace and I did move fast enough to entertain the crowds watching me, but not continuous right movement). I didn't speed run it or even close admittedly; it was considered a feat back then just to survive the first couple of stages let alone beat the entire game.

Cheers! The Transformers one never shipped outside of Japan; it was considered too difficult even by most Japanese. I think that one was the hardest in my list besides IWBTG. It doesn't look so hard but the main reason it's difficult is that the controls are so stiff. There's a huge lag between jumping, transforming into a truck, movement has an awkward inertia to it, etc, so it's not so reflexive like Ninja Gaiden or Ghost & Goblins as being able to anticipate what we should do long before we do it.
It's somewhat similar to Castlevania in that regard. Simon moves like a stiff statue, jumps awkwardly with lots of momentum that can't be negated by pressing in the opposite direction, he flies backwards far when hit which can be deadly if we're next to a fatal pit to fall through, etc. So Castlevania to me is kind of similar in that we have to plan our movements more in advance since we can't make so many course corrections reflexively.
I don't think I ever tried Battletoads although that looks like such a fun game, like beat-em-up with a much heavier dose of platforming than usual. It didn't seem become so popular in Japan or later Singapore where I lived when I was still playing Famicom/NES.
One that had me furious though and rage quitting was Gradius on both MSX (computer system popular in Japan) and NES/Famicom.

That game was so brutal since I'd have a good run and amass upgrades like missiles and lasers and shield/option and be blasting through everything, then die in a late stage and then I'm just royally screwed trying to frantically just get a speed upgrade or two and barely being able to kill anything. It's like we either need to perfectly beat the entire game in one life or have near-godly skills to beat it. It's so brutal if we die midway to resume from where we left off with no upgrades.

I tend to avoid difficult games, but I think the game that I had the most difficulty with (mostly due to the terrible controls) but managed to beat, was MDK2 on ps2.
The biggest struggle singleplayer was Darksouls 3. I beat it, I beat sekiro, I beat Elden Ring. But Darksouls took me the longest to beat.
Multiplayer game is league of legends, because you play in a team and that's what makes it difficult, because you have to work together. And for some reason they just can't work together. If one thing goes wrong, they give up immediately and sabotage the whole team.
I had a stupid hard time beating Kingdom Hearts 2 as a kid, I went back and played it as an adult to finally beat it lol. Demyx was the problem 😂 I generally don’t play games that I find difficult to be honest.

This is gonna probably be an outlier but I'd honestly say old school RuneScape, the mechanics of the end game bosses are unforgiving and you can die extremely quick if you mess up, /dark souls/sekiro/elden ring are tough games as well, never could beat sekiro though but close, I just think as hard as they are at least you might can outheal a boss or overlevel yourself before one so I find them slightly more forgiving than RuneScape bosses honestly, maybe I'm just terrible at point and click games

I was a kid the first few times and didn’t cycle through everyone in fights to complete their sphere grids so I was massively under leveled 😂 learned the hard way
i like to play more chill games that you basically can't win, like forza horizon, but the games i have won/beat are celeste, and hollow knight ( both are platformer games), both were challenging, but fun.
