If a guy never compliments you, does that mean he's not interested? This guy I'm seeing, shows signs that he's interested in me long term, talking about the future etc, but he never compliments me, or says things like 'hey beautiful'.

The closest to a compliment he's ever given me, was when he said that his auntie thinks I'm very very beautiful.

So he mentioned you to his auntie eh. There's a complement.
Another reason a man might not complement is fear. For example, supposing he expresses his attraction to a girl but does not want a sexual relationship, but then she starts pushing just that, then he might be more cautious next time around fearing the next girl might be the same. If that's the case, then maybe reassure him that will will respect him and not push him beyond his boundaries. Once he trusts you on that, then he might open up more.
