My Girlfriend isn't the most affectionate person in the world, she's a bit awkward at times and that's just the way she is and she has said this herself. Myself on the other hand am very affectionate and enjoy physical touch etc.
I was just looking to no if this is something that will change in a person?
She's not the most "girly" female but she's not quite tomboy and I do care about her a lot but because she's not that affectionate it gives me the impression she's not as into me as I am into her. Maybe I've just got anxiety of her leaving me Is all.

It probably won't change. Some people are just naturally less affectionate than others.
If you're early in the relationship, maybe it will get a little better as she gets more comfortable and confident but I wouldn't count on it.
You could try taking (and asking her to take) the quiz at www.5lovelanguages.com and sharing the results with each other. My guess is that you will have a high score for Physical Touch and she will have a low score. Maybe knowing that she'll try to be a little more affectionate but if it's not something she likes and it's important to you it could be an unresolvable incompatibility.
I don't think it's something that would change. I am not affectionate either towards some people i love and i for sure won't change it. You have to trust her and talk to her if you feel she doesn't love you
