I would definitely not read the letter because I am very well aware what the final aim, the ultimate goal of that person is when he writes his letter.
I would return his letter the second he hands it over to me because I am not interested in getting involved in any kind of relation. I would of course put up my defensive wall instantly because this type of behavior from the side of a customer is indicative that he may be stalking me when I end my shift.
That is also why I always carry my pepper spray with me, just in case. I would be alarmed that the man would wait somewhere when I leave the building. In that case, I would take a taxi and ask the driver to leave me in a very well lit area where I can observe if I am being followed.

I would be creeped out and probably politely decline.
It depends. If he's cute and I'm interested in him then I would contact him. I would go out with him if he asked me out and I'd make sure to be really discreet about it. If I have no interest in him at all then I'd just ignore the letter.
Honestly, I'd probably be a little creeped out. It would feel like someone was stalking me. I get he doesn't want to get me in trouble, but if I don't recognize him from all the other customer's, I'd be a little weirded out.
