    I think it depends on the cut/grade. For leaner cuts with little fat, I tend to like even a blue rare here and there. For fattier and higher quality ones like a Wagyu, medium-rare to medium.

    Might also depend on the style with sauce. If it's Japanese style, we sometimes eat with soy sauce and wasabi and sliced quite thinly like sashimi, and I like blue rare in those cases. If it's more like garlic and butter and herbs and more Western-style, I tend to like closer to medium-rare.

    I like my steak in the most coveted way, medium rare. Just enough pink and juice. As an added opinion, by way of proxy, my wife loves it the same way. As a bonus opinion, she also says sometimes I smell like a steak 😳

    Before we open the question, there's a picture. Left part of picture isn't even baked, more raw than anything. It's unhealthy and dangerous. You can get parasitic diseases because only full thermal processing kills their eggs or hybernated larvae. Same thing about certain bacteria and animal viruses.

    Rare enough that is not mooing, but not by much.

    I also like a thick cut. Post COVID, the last steak I was served was cut so thin that it only had one side! It was also priced higher than pre-COVID.

      My father used to turn hamburgers into hockey pucks and did the same for steak. I am not that extreme but I make them with no pink on the inside.

      @exitseven I agree with your dad on burgers, but steak should be soft and almost melt in your mouth (at least in my mouth). I like carpaccio too.

      I have perfected cooking them well done but not turning them into shoe leather. I start them on the top shelf of the grill and when there is no pink showing I sear them a couple of minutes a side. They are juicy and melt in your mouth delicious.
