The best dumpling I ever had was a vegetarian dumpling with soy bean and mushrooms and carrots and hard tofu and sliced water chestnut. It can only be made with extra square jumbo sized dumpling wrappers and string and you will have to use special equipment to cook it since string can catch fire with traditional cooking methods. It’s worth it though, as long as you add salt, you will get the best dumpling of your life!
I don’t celebrate Thanksgiving because I live in the UK, but my mum is a vegetarian and for Christmas she’ll switch it up. Sometimes she has a nut roast, last year she made a really great pastry. I can’t remember exactly what was on it but there were a couple of different cheeses, apricots, nuts, etc. it was so good!
I mean if your a vegan because of "Moral" reasons you would not celebrate Thanksgiving anyway lol.
Though normal people shouldn't anyway unless they support the culling of natives.

Vegetarians/Vegans aren't real people, and aren't worth worrying about. LOL.
OK, ok, I was (mostly) kidding. But I don't make special accommodations for them in my house, though there are plenty of non-meat dishes to eat at my Thanksgiving, so no one would starve. It might not meet their full nutritional requirements, though.
I'm neither vegan nor vegetarian. Despite my fondness for meaty meals, I'm not really a fan of turkey. Furthermore, I don't really like to get bloated during the TG Day dinner. If I could help myself, I'll eat everything else instead of the turkey.
Long term vegetarian here. We are having the following:
Tofurkey though we dont often eat meat Replacements its traditional.
Ambrosia salad using vegan marshmallows (most marshmallows are derived from pig fat)
Stuffing with currents and pine nuts (vegetable broth as a base)
Potatoes, of course both brown and sweet
Rolls
Pie
Etc.

Lots of options herePumpkin spiced lasagna. Pumpkin spiced mac and cheese. Anything with those fall spices. But over I don't care, as long as it's good food.
There are lots of things. The most stereotypical thing would be “ToFurkey””, but there are so many amazing recipes online I couldn’t even begin to name them. Although I am not a vegan or a vegetarian, many of my friends are.
They eat everything on the table other than the meat.
Yams, stuffing, stuffed mushrooms, broccoli, cauliflower, you name it. There are plenty of non-meat foods at most Thanksgiving celebrations.Yes, we have a couple of vegetarians in our family. They normally enjoy all the other side dishes such as green bean casseroles, mashed potatoes with butter and cream. There normally is also a pasta dish or other vegetarian dishes (Tofu/Veg stir fry, soups, etc.)
Thanksgiving is the reason i quit vegetarianism. Ell oh ell! I had one plate full of “side dishes”, and watching everyone else enjoying the turkey broke my discipline into a thousand tiny pieces. Ha!
It’s a good question. I think at this point there is a vegan or vegetarian substitute for about everything. You have to be careful though. Some are so jam packed full of soy.
Probably vegan turkey. I wouldn't be surprised, there's already mock versions of dairy, cheese, and eggs.
They eat jackfruit and tofu turkey. Lots of vegetables. While at university one of my male roommates was a vegan and that's what he ate
As a long term vegetarian I'm offended by textured soy protein pretending to be meat. Let me have vegetables that haven't been cooked in meat fat.
I don't have all the info on faux meat but I hope they stayed with natural foods, mushrooms, veg, nuts, grains.

Have you noticed the massive anti Turkey meat push this year? Tons of people suddenly claiming they don't like Turkey (or ham).
how about some tofu with soy sauce? doesn't that sound appetizing?
