at least here, where I am (South Texas and Northern Mexico) it has never fallen out of fashion, although... in the last years, it has gained popularity and became more expensive and there is a lot more variety in dishes you can find with it... tuétano, we call it in Spanish or just marrow in English




This is the only thing that is better than the most delicious meats and steaks. I made butter with it and i have no words to describe the tatse. I do order cut bones, large ones at the grocery store where i live and this year they cost almost double compared to the last year but i took it anyway. I love these 😋
I cook out beef bones marrow for broth, au jus or traditional bolognese sauce. Marrow isn't especially appetizing and it's fat.
Marrow is delicious on its own. Add some rosemary, paprika and garlic, muah chef kisses

Nope, just the little ones. I absolutely insist on traditional Buffalo wings because i really do enjoy cleaning the bones of the meat, and sometimes the cartilage. Same goes for rip tips, and occasionally ribs.
I am a meat eater, and bones are part of the deal. I just prefer the tiny ones. Unless it’s a beef rib…. then i’ve got a big ol’ bone in my mouth!
I make ox tail soup. I haven't made if for quite a while, though.
Marrow bones used to be inexpensive, as if they were for people who couldn't afford good cuts of meat. The price went up at some point, as if the bones are now a delicacy.
I always DID consider them a delicacy. Yum.
Really, I'd never suspected so many things possible with marrow bones. When I have such a bone, I just pick out the marrow and mix it in the cooking vegetables or sauce. Sometimes I just cook it out in water to make the basis for a real antique soup.
Marrowbone makes THE best gravy in a stew. Slow cooked with brisket of just a nice big piece of shin that falls apart after four or five hours slow cooking then add a bit of cornflour to it and crank up the heat for twenty minutes while it thickens. Even better camping over a fire in a cast iron pot. Slow days food. Great stuff

I prefer making bone broth for Ramen as I like the collagen. The stuff is great for helping stomach issues and building muscle.
