Depends, if we are talking sweet crepes, like for breakfast then usually Greek yogurt/sour cream with fruit, jam, or lemon curd.
If we are talking savory crepes for dinner. Then ham, Swiss cheese, and mushrooms. Topped with a Béchamel

I have often blinì, which are very similar to crêpes, with jam. The jam can be strawberry or orange or blueberry or whatever flavour we have in the refrigerator.
