Normally, I'm less of a fan of breaded things - it's often too dry. However, the best onion rings BY FAR that I've ever had were breaded - just not how you'd probably think.

Many people know that Panko breadcrumbs are used in the best onion rings, and that's true, but the other secret ingredient is dried potato flakes - the same stuff you make crappy instant mashed potatoes from. But in this case, the onion rings are amazing, and SOOOOO crispy if you wiggle an onion ring on a plate, it sounds like you're raking diamonds across glass. And when you bite into one, it sounds like you're crunching down on a mouthful of potato chips. These don't get soggy at all - they are deliciously crispy until the last one is gone.
