National food is a safe base you can return to. The ingredients are cheap and easy to get and there's a comforting familiarity in a meal you've had since childhood that you can cook without referring to a recipe book.

I may have a different perspective as someone who grew up with ARFID, but many of my "safe" foods nowadays are Thai, Italian, and Mexican cuisine, and I often eat the exact same things for days in a row simply because I don't feel a need to change it up. As long as it's something I know I can tolerate I don't get tired of it.
That said, I do occasionally experience a weird phenomenon where I go to eat one of my safe foods and suddenly my brain is like "nope, that's poison" for no reason at all and then my throat closes up. But that's probably an ARFID thing.
I’ve never heard of anyone getting tired of eating their national, local food. Yes you can get tired of 5 days of pizza (maybe or maybe not). There is a large variation of what you can have, dishes are varied to remove that sameness.

I don't get tired of any food...
but is not like I am constantly eating the same thing over and over and so on, no... This does not happen to me, i love the same foods over and over again. I get addicted, but i do tend to prefer my own national food such as the Sunday Roast, fish and chips and the Full English Breakfast to name a few.
I've never experienced getting tired of any of the foods I cook.
