+1 yI dunno about the UK, but the US has a serious problem with sugar. Baking your own treats allows you to control the quality and quantity of the ingredients you use. That’s just plain smart, if you ask me. It is more time consuming. We also have a problem with instant gratification here. I was listening to a podcast in which one of my favorite athletes was talking about the diet she was on. The short of it suggests that we should be eating much less of highly processed foods. That’s not news. The reason was, at least for me. If you think about the time and energy it takes to take grain from seed to baked goods, nobody could eat as much as most of us eat if we had to grow it and make it ourselves. We only do because we can just pick it up at the store with zero effort invested. Zero calories out plus eleventy thousand calories in equals an obesity epidemic. So i just try to keep that in mind when i’m shopping.

Doesn't really work that way with baking. There's a science behind the quantities of ingredients, when you start messing with the amount of sugar for example you are changing the structure of of baked good.

Sure, but it’s much more flexible than you’re suggesting. The kinds of sweets you’ll buy at the store have tens of grams more sugar per serving than what is necessary just to get the right flavor, texture and rise of a given product. That’s not to mention all of the chemical preservatives that you’ll find that most people aren’t putting in their food because they’re not shelving it for months or years.

It's a little flexible but you have to know what you're doing. I'm a pastry chef, I've experimented a lot with cutting back certain ingredients to save on cost. There's definitely a slim limit especially with sugar where the structure changes drastically. You can go from a flat cookie with crunchy exterior and chewy interior to a dense dry ball with only half the amount of sugar.

465 opinions shared on Food & Beverage topic. I mostly bake from scratch, especially for the past decade, but I have used cake mixes in the past. I don't use them anymore because they - like so many other foods - were downsized about 15 years ago to disguise a price increase, which was insane because the original size was determined by how much batter was needed for a 9x13 cake or 2 9" round cakes. The modern smaller mixes don't create enough batter for a full-sized cake, making them useless.
"Half gallons" of ice cream are now only 3 pints instead of 4, and so many other pre-packaged foods are smaller, but while that is evil and infuriating, it's not as bad as screwing up a baking recipe. So, I went back to 100% scratch with recipes inherited from my grandmother, and they are better and make the right sized cakes.10 Reply
+1 yI don't really like cake that much. I'm more an ice cream or cheesecake kind of girl. But I've done all of those for different reasons. There are a lot better quality mixes available today than there were 20 years ago, and if I am baking with kids I am definitely using a mix (or premixing the dry ingredients ahead of time myself). It's a more positive experience for everyone that way. I can make normal and grain-free cakes from scratch, but I don't always choose to. My favorite thing to do with cakes is decorate them, so a mix gets the boring part over with so the fun can begin!
I guess that makes me less of a woman. Shoot. Always a moving goalpost to strive for! :D

I count myself as pretty lazy, but not quite pre-made cake-mix lazy. That is a whole other level of incompetence.
It has been quite a few decades since then, but back in my teenage years in the middle of the Ceredigion countryside I used to occupy much of my nocturnal hours grinding out chocolate cakes. Yes. Grinding.
I'd just make a chocolate cake, then I'd make another chocolate cake, then another and another. And my family members would wake up to a kitchen full of generic copypaste chocolate cakes... Then we'd have to go around giving them to the neighbours so they didn't go bad... and one time the dog ate several of them and got sick.
They weren't bad cakes.
I just made too many of them.

I've used a cake mix box alright! You see, I've got this little fantasy going where I play the role of a well-endowed baker. With my huge schlong hanging out of my apron, I'm creating the most decadent, moist cakes using only the finest ingredients (if you know what I mean). And when it comes time for the mixing, well let's just say things get downright handsy if ya catch my drift.
My kitchen becomes a veritable playground for all sorts of naughty behavior; think flour everywhere, dough being kneaded and spanked, and "frosting" getting licked off fingers. But don't worry about me getting too full on these tasty treats – after each session, I clean up thoroughly... with my tongue.

I like home made things :D so I mostly bake from scratch at home
but sometimes... I buy the the butter cookies :D

I'd expect a woman to be able do it from scratch without an electric beater and agree that she is less of a woman if she can't.

+1 yI've used mixes. As a professional patisserie chef there's no shame in using them. Some are really good plus a few less dishes is always a good thing.

+1 yYes, and they've turned out to be pretty good. I prefer making pies though over cakes, I enjoy the fresh fruit in a pie over cakes/icing.
