Demi glace sauce made in slow cooker.
two lesson learned:
- don't overheat while cooking and reduction (use temperature sensor and keep temp below 92C) otherwise proteins start to curdle and it loses taste
- don't roast bones, beef and veggies too much in backing oven, sauce get darker but slightly bitter with too long and too hot roasting.
The last dish I learned how to cook was chili. It was the second time I made it, and it won 3rd prize in a club I belong to. I'm not a chili fan but they make this contest every year in January.
But I also learned how to make eggplant with miso sauce, a Japanese dish. Delish.
The last "dish" I learned was how to make my own pork sausage. Of course, even the cost of ground pork has gone up 50% in the last year alone - $1.99/# to 2.99/#. We are scratch-making SO many more foods now, just to be able to eat without torpedoing our food budget.

Tacos al Pastor are usually pork and beef, either or both... I've tried lamb too, but never ever before had it chicken al pastor
it's more about having the right gear, lol... the cooking is fairly easy, you just set it up and wait

Saag Paneer. There was an amazing little hole-in-the-wall spot run by a husband and wife from my neighborhood who were kind enough to help me out with a food run from their own kitchen during the pandemic. Before they returned to Delhi the wife taught me how to make it. It's always been one of my favorite things. It's not as good as HERS, of course, but it can hold its own, lol.
Mmm I don't know the last time I followed a recipe for a completely new dish that I've never made before. Probably a cake at work id imagine but it's not like I've never made cake before, it's my literal job I just used it as an idea to use up some ingredients...

It was delicious! The premade stuff doesnโt come close to freshly rolled. Itโs also cooked in a pan with fresh mozzarella.
