What’s the difference between caponata and ratatouille? Pesto and chimichurri?

Can anyone else think of two dishes super similar that are versions of eachother that originated from a different country?

The problem is by the time recipes get written down they've often already spread wide and far. Generally it's only old recipes from palaces and stately homes that survive on paper while peasant recipes on scraps of paper are lost
It makes it near impossible to work out where things originally came from
