I can definitely see why it could work for certain businesses and certain people who would be into that, yes...
but personally... it would not do anything for me in the appealing sense, that's just me though...
it's just going to fill me with questions lmao... are they edible, are they even real... where and how they got them, and are they clean enough... is it going to cost extra because of the fancy deco... lol
and then, at the end of the day, it is pastry... it's carbs, that's my weakness, and that's all it takes to appeal to me

They're real flowers, most dont taste like anything. Majority of people just pick them off when eating
we only live once so... if they took the time to do it, I'm eating those... lmao
Some are actually edible (marigolds, etc). I used to make foods which included significant garnish, although most were not "living plants". We've had to simply the way we cook, eliminated half of our assorted salts, mustards, make our own dressings, etc. just to hold the budget on foods. Dill is one "required" herbal "greenery" that is still quite active on my spice rack, plus fresh from our yard when I make dill pickles. Whether it's a "garnish" or a needed "ingredient" depends on the recipe and/or someone's own "take" on the issue.
Definitely, flower decor make me wonder if the food kinda resemble the floral taste and i would be interested enough to try one

Oh, I get that - it's more of a PTSD thing, seeing flowers on food. :-)

Honestly, if there was a tart with a flower on it I’d probably choose it over a cupcake since it pulls my attention to the baked good.

No. I hate having to edit my food while I'm eating and the more of that shit I'm not gonna eat that you put on it makes more work for me. If it's just one minor decoration that I can very easily lift out, I can deal with that. Mom used to put grated green peppers in her meatloaf and I hated that!! They looked like little boogers hiding in the meat!! She claimed it was to give it more flavour!! When I made a meatloaf, I DIDN'T use the peppers and it tasted exactly the same!!
It is except flowers often are inedible. I always try and make food look appealing by using things like avocado slices as garnishes. The aesthetic matters.
Legally you can only put edible things on food unless the thing is designed to keep it fresh or hold it together
Color, texture and smell is what makes food appealing. Flowers may bring these three aspects to your food or enhance them.

Not for me personally. Presentation does make a difference in the restaurant industry, but I'm not gonna be complaining if my pastries don't have flowers in them lol
