Oh dear, I was so disappointed. To me it was just cheap sauerkraut with a pinch of chilli tossed in. I could replicate it at the fraction of the cost.
So am I right as usual? Is the Korean favourite just spiced up sauerkraut?

I mean, technically yes, both are fermented cabbages. But it's different type of cabbage, different ingredients and a different process.
It's kind saying kfc chicken tenders are the same as Korean fried chicken wings. Technically both fried chicken but still feels very different.
Personally I much prefer kimchi over sauerkraut. The latter tastes quite boring in my opinion.

You tasted something called kimchi, but not really kimchi 😊
Proper Korean kimchi uses napa cabbage, salt curing, Korean chili flakes (gochugaru), garlic, ginger, fish sauce or salted shrimp, sometimes rice paste, and it ferments differently from European sauerkraut.
Sauerkraut is simply cabbage and salt, lactic-fermented, usually without aromatics.
You probably got a simplified, Western-style version, not the deep, funky, complex original.

Is kraut fermented? I'm not familure enough to say if it is or not, but that would be my guess of anywere you might be wrong.
I just know I'm not putting kimchi on my hot dog.
That does not sound like kimchi, that sounds like pickled mustard or pickled radish. Kimchi is supposed to have a garlicky and sweet flavour.
Errr... given kimchi is about a millenium older, if that's the comparison you want to draw then sauerkraut is dulled down kimchi.

Both are superfoods of the world. Just eat whatever tastes good.
